Thyme honey

Based on its origins as a medicinal plant used by the Greeks, thyme honey has therapeutic, antiseptic and healing properties. It is produced by honey bees from the nectar of thyme flowers, making it a monofloral honey. We harvest this pure honey in late spring and early summer in the Montes Universales mountains in Teruel.

If we stop to observe it, thyme honey reminds us of the plant from which it is extracted, presenting a very unique reddish colour, which can lighten when it crystallises.

Although it has an intense aroma, it is more relaxing on the palate, with a subtle, caramelised flavour. In terms of texture, when harvested or extracted, it is quite liquid, but over time it tends to crystallise naturally, making it one of the most widely consumed natural honeys due to its countless properties.
